In my opinion, Apricots are an under appreciated fruit. Nutritionally they are a very good source of vitamins A and C, Iron, and beta-carotine. Apricots also provide us dietary fiber, all while being very tasty.
This is a simple smoothie recipe that showcases the Apricot. It is easy to make and even easier to enjoy.
2 cups pitted and chilled Apricot halves
1 cup vanilla Greek yogurt
2-4 drops vanilla extract
1 tbsp. Chia seed
Ice to taste
