

If your garden is growing right now with so many tomatoes, veggies and herbs that you can’t keep up–don’t be afraid to cut tomatoes in chunks and freeze them. You can use them to make some great smoothies for lunch, along with the fresh parsley that you are growing, that are low in calories and the perfect meal if you are counting calories to lose weight.
In your smoothie blender mix:
- 2 cups of frozen tomato chunks. Using frozen tomatoes helps your smoothie to be cool and fresh.
- 1 medium carrot, cut in chunks first
- 1 cup of chilled carrot juice (or a V8 Vegetable juice)
- 1/4 cup fresh parsley
- Dash of salt and a touch of pepper if you like
- 1 teaspoon of chia seed for omega 3′s
This is a wonderful healthy snack idea or lunch–and definitely a great way to use your tomatoes from your summer garden.
