Butternut Squash Smoothie

Butternut Squash Smoothie


For a light lunch try a Butternut Squash Smoothie.  Roast a butternut or acorn squash.  Use approximately 1 cup squash meat, and add:

- 1 cup 2%, evaporated or soy milk
- ½ tsp each of ginger, allspice and cinnamon
- 1 Tbsp honey

Blend until smooth.

Here’s a hint….for a nice cold smoothie, keep the squash meet refrigerated until you mix with cold milk!   A delicious, lunch treat during the fall when squash is available in our grocery stores and farmer’s markets.
