

Pears are a pretty neat fruit. They have been around for almost as long as we have but, instead of being tropical, the earliest evidence of pears as food is from the Celts and Slovak languages. They are even mentioned in the “Odyssey”. Today we recognize them as a good source of dietary fiber and vitamin C. We also recognize them as tasting great and mixing well in smoothies!
Try this recipe for a real pear treat:
- 2 pears, cored, seeded and cut in chunks
- 1 cup of low-fat coconut yogurt
- 1 cup of fresh baby spinach
- 1 Tablespoon of chia seed
- 6-8 ice cubes,or 1 cup of crushed ice
And if you have any coconut flakes in your pantry to add-this is the perfect recipe to bring them out! You can add 1/4 cup to your smoothie or just use them for garnish. Toasted coconut flakes are just yummy!
