Mixed Vegetable Smoothie

In the afternoon, instead of grabbing a stick of celery, pick yourself right up by blending tomatoes, carrot juice and onions for a delicious Mixed Vegetable Smoothie blend!  Mix the following:

- 4 stalks of celery (without the leaves)
- 2 tomatoes cut in chunks
- 4 scallions
- ½ cup of tomato, carrot or V-8 juice
- 1 Tbsp lemon or lime juice
- 1 tsp Chia seed
Mix together and top with a sprig of parsley. Adding a teaspoon of chia seed powder is the perfect way to get more omega-3 fatty acids in your diet. And, if you want to add a “bit of a kick,” add a little horseradish or Tabasco!
