One of my favorite vegetables is what I call that “wonderful white carrot,” but actually is a parsnip. They have such a unique flavor and mixed with apples-I just love this smoothie for lunch!
-1 cup of cold apple juice
-1 large red delicious apple
-2 medium parsnips cut in small chunks**
-1 Tablespoon of honey
-1 teaspoon of chia seed for your Omega 3s
2-4 ice cubes (if needed to think out the consistency of your smoothie)
(It is best to slightly cook the parsnip, just like you would carrots–simply scrub the outside and place in a pan with a little water, steaming until soft. You can do this and just store in the refrigerator in a zip lock until you are ready to use.)
