

Oh—this is good!
-1/cup of butternut squash*
-3/4 cup frozen pineapple chunks
-1/4 cup pineapple coconut juice
-1 cup low-fat vanilla yogurt or soy yogurt
-1 Tablespoon honey
-1 teaspoon of chia seed for omega 3s
* There are a couple of ways to prepare your squash. One is to cut butternut squash in half and put in a shallow pan with a little water and cook until soft. Scoop out the meat and store in a ziplock until you are ready to use. A second way is to buy cooked/canned squash-there are some great organic canned squash or a third way is to buy some Gerber baby food pureed squash. All great ways to have a healthy tasty food read at any time.
